Tucked away in the mountains, the intense heat of the sun at high elevation results in early ripening agave with concentrated sugars. Bold mesquite, bright citrus, and black pepper abound. Maestro mezcaleros Ivan and Francisco Mendez use 100% Espadn (Agave angustifolia) grown at an elevation of over 7,000 feet. This mezcal is milled using horse driven stone tahona,
